A hearty breakfast casserole loaded with savory sausage, crispy hash browns, and melted cheddar cheese, perfect for feeding a crowd.
Ingredients
- 1 pound breakfast sausage (regular or hot)
- 6 green onions, chopped (divided)
- 1 red bell pepper, chopped
- 10 large eggs (room temperature)
- 1¼ cups heavy cream
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Tabasco sauce (optional)
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese, shredded and divided
- 1 (30-ounce) package frozen shredded hash browns, thawed and well-drained
Instructions
- Preheat your oven to 350°F and prepare a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet, cook the sausage, bell pepper, and the white and light green parts of the green onions over medium-high heat until browned, about 6-8 minutes. Let cool slightly.
- In a large bowl, whisk together the eggs, heavy cream, Dijon mustard, hot sauce, salt, and black pepper until smooth.
- Stir in 1½ cups of cheddar cheese, thawed hash browns, and the cooled sausage mixture.
- Pour into the prepared baking dish and smooth into an even layer. Cover with aluminum foil and bake for 50 minutes.
- Remove the foil and sprinkle the remaining cheese on top. Increase the oven temperature to 400°F and bake uncovered for an additional 10-15 minutes until the cheese is melted and lightly browned.
- Let the casserole rest for 10 minutes before serving. Garnish with the reserved green onions.
Notes
This casserole can be prepared the night before and baked in the morning. Make sure to thaw and thoroughly drain hash browns to avoid excess moisture.
