Description
A charming Pineapple Upside Down Cake featuring caramelized pineapple rings and a sweet, tender cake base, perfect for family gatherings.
Ingredients
- 1/4 cup unsalted butter, melted
- 1/2 cup light brown sugar
- 1 20-ounce can pineapple slices (drained)
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 8 tbsp unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs (room temperature)
- 1/3 cup milk
- 1/4 cup reserved pineapple juice
Instructions
- Preheat your oven to 350°F (175°C).
- Pour the melted butter into a 9-inch square pan, then sprinkle the brown sugar evenly over the butter.
- Arrange the drained pineapple slices on top of the brown sugar layer. Place a maraschino cherry in the center of each pineapple slice.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Beat the softened butter until creamy in a large mixing bowl.
- Add the granulated sugar gradually, beating until light and fluffy.
- Mix in the eggs one at a time, followed by the vanilla extract.
- Alternately add a third of the flour mixture and the milk along with the reserved pineapple juice, mixing just until combined.
- Pour the batter over the arranged pineapple. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 5 to 10 minutes, then carefully invert it onto a plate.
- Serve warm and enjoy the sweet results!
Notes
Dust with powdered sugar or serve with vanilla ice cream for a delicious treat. Store in an airtight container for up to three days.
