Description

A charming Pineapple Upside Down Cake featuring caramelized pineapple rings and a sweet, tender cake base, perfect for family gatherings.


Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1 20-ounce can pineapple slices (drained)
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 8 tbsp unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs (room temperature)
  • 1/3 cup milk
  • 1/4 cup reserved pineapple juice


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter into a 9-inch square pan, then sprinkle the brown sugar evenly over the butter.
  3. Arrange the drained pineapple slices on top of the brown sugar layer. Place a maraschino cherry in the center of each pineapple slice.
  4. Whisk together the flour, baking powder, and salt in a medium bowl.
  5. Beat the softened butter until creamy in a large mixing bowl.
  6. Add the granulated sugar gradually, beating until light and fluffy.
  7. Mix in the eggs one at a time, followed by the vanilla extract.
  8. Alternately add a third of the flour mixture and the milk along with the reserved pineapple juice, mixing just until combined.
  9. Pour the batter over the arranged pineapple. Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool for 5 to 10 minutes, then carefully invert it onto a plate.
  11. Serve warm and enjoy the sweet results!

Notes
