Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1 20-ounce can pineapple slices (drained)
  • Maraschino cherries (as many as you like)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 eggs (room temperature)
  • 1/3 cup milk
  • 1/4 cup reserved pineapple juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pan by pouring melted butter into a 9-inch square baking pan and sprinkling brown sugar over it.
  3. Assemble the toppings by placing pineapple slices over the sugar mixture and adding a cherry in the center of each slice.
  4. Mix the flour, baking powder, and salt in a medium bowl and set aside.
  5. Cream the softened butter in a large mixing bowl and gradually add sugar until light and fluffy.
  6. Incorporate eggs one at a time, ensuring each is well combined before adding the next, then stir in vanilla extract.
  7. Combine the flour mixture, milk, and pineapple juice with the wet mixture, mixing just until combined.
  8. Pour the batter evenly over the pineapple and bake for 45 to 50 minutes until a toothpick comes out clean.
  9. Cool for 5-10 minutes, then flip the cake over onto a plate and serve warm.

Notes

For added flavor, use fresh pineapple and ensure to drain the juice thoroughly to avoid a soggy bottom.
