Ingredients
- 1/4 cup unsalted butter, melted
- 1/2 cup light brown sugar
- 1 20-ounce can pineapple slices (drained)
- Maraschino cherries (as many as you like)
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter (softened)
- 1 cup granulated sugar
- 2 eggs (room temperature)
- 1/3 cup milk
- 1/4 cup reserved pineapple juice
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pan by pouring melted butter into a 9-inch square baking pan and sprinkling brown sugar over it.
- Assemble the toppings by placing pineapple slices over the sugar mixture and adding a cherry in the center of each slice.
- Mix the flour, baking powder, and salt in a medium bowl and set aside.
- Cream the softened butter in a large mixing bowl and gradually add sugar until light and fluffy.
- Incorporate eggs one at a time, ensuring each is well combined before adding the next, then stir in vanilla extract.
- Combine the flour mixture, milk, and pineapple juice with the wet mixture, mixing just until combined.
- Pour the batter evenly over the pineapple and bake for 45 to 50 minutes until a toothpick comes out clean.
- Cool for 5-10 minutes, then flip the cake over onto a plate and serve warm.
Notes
For added flavor, use fresh pineapple and ensure to drain the juice thoroughly to avoid a soggy bottom.
