Ingredients
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 can (20 oz) pineapple slices, drained
- Maraschino cherries (optional, for garnish)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a 9-inch round cake pan. Once melted, sprinkle the brown sugar over the butter, spreading it evenly.
- Arrange the pineapple slices over the sugar mixture. Place a cherry in the center of each pineapple ring if you’re using them.
- In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, combine milk, eggs, and vanilla extract. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Pour the batter over the pineapple layer in the cake pan.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool for 10 minutes before inverting onto a serving plate.
Notes
Serve warm with vanilla ice cream or whipped cream. Store in an airtight container for up to three days.
