Ingredients
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 can pineapple slices (in juice)
- Maraschino cherries (about 10)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a saucepan, melt the butter over medium heat. Stir in the brown sugar until it’s melted and smooth. Pour this mixture into the prepared cake pan.
- Arrange the pineapple slices over the butter-brown sugar mixture, placing a maraschino cherry in the center of each slice.
- In a bowl, combine the flour, baking powder, and salt. In another bowl, mix the granulated sugar, milk, eggs, and vanilla until smooth. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter over the pineapple slices in the cake pan, ensuring even coverage.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for a few minutes, then invert it onto a serving plate. Serve warm and enjoy!

For a dairy-free option, substitute coconut milk for regular milk. Experiment with flavors like cinnamon or nutmeg for added aroma.
