Description

A nostalgic and delightful cake featuring caramelized pineapple and cherries, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple in juice
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 3 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan.
  2. Melt the butter and pour it into the prepared pan. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange pineapple slices on top of the brown sugar and place a cherry in the center of each slice.
  4. Mix flour, granulated sugar, baking powder, and salt in a separate bowl.
  5. Whisk together the milk, eggs, and vanilla in another bowl until well combined.
  6. Combine the dry and wet ingredients, mixing until smooth.
  7. Pour the cake batter over the pineapple and bake for about 40-45 minutes, or until a toothpick inserted comes out clean.
  8. Allow the cake to cool for a few minutes before inverting it onto a serving plate.
