Ingredients
- 1/2 cup butter
- 1 cup brown sugar
- 1 can (15 oz) pineapple slices, drained
- Maraschino cherries
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a round cake pan, swirling it to coat the bottom and sides evenly.
- Sprinkle brown sugar over the melted butter to create a nice caramel base.
- Arrange pineapple slices atop the brown sugar and place a maraschino cherry in the center of each ring.
- In a separate bowl, blend together the flour, granulated sugar, eggs, milk, vanilla extract, baking powder, and salt until you have a smooth batter.
- Gently pour the batter over the arranged pineapple and cherries.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let it cool for a few minutes before inverting onto a serving plate.
Notes
For an extra layer of flavor, try adding a tablespoon of rum to the batter. Use fresh pineapple for juiciness, and allow the cake to cool completely before inverting.
