Description

A nostalgic Pineapple Upside Down Cake with golden pineapples and luscious caramel topping, perfect for any occasion.


Ingredients

  • 1/4 cup unsalted butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • Maraschino cherries (as many as you like)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a round cake pan, melt the butter. Then, sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the pineapple slices on top of the brown sugar and place a maraschino cherry in the center of each slice.
  4. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  5. In another bowl, combine the granulated sugar, milk, egg, and vanilla. Mix the wet ingredients into the dry ingredients until just combined.
  6. Pour the batter over the pineapples in the cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes, then invert the cake onto a plate.

Notes

Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
