Description

A nostalgic dessert that combines sweet and tangy flavors with caramelized pineapple and cherries, perfect for any occasion.

Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can sliced pineapple (in syrup)
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt butter: In a small saucepan, melt the butter, then pour it into the cake pan.
  3. Add brown sugar: Sprinkle the brown sugar evenly over the melted butter to create a caramel base.
  4. Arrange the fruit: Place pineapple slices over the brown sugar, and put a maraschino cherry in the center of each slice for a pop of color.
  5. Mix the batter: In a bowl, combine the flour, granulated sugar, milk, eggs, vanilla extract, baking powder, and salt. Stir until smooth.
  6. Pour the batter: Carefully pour the batter over the pineapple mixture, spreading it evenly.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and invert: Allow the cake to cool for a few minutes before inverting it onto a serving plate to reveal the gorgeous topping.

Notes

Serve warm or at room temperature with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container for up to three days.
