Description
A nostalgic dessert featuring caramelized pineapples and cherries atop a buttery cake.
Ingredients
- ½ cup butter
- 1 cup brown sugar
- Fresh pineapple or canned pineapple rings
- Maraschino cherries
- ½ cup softened butter
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- Melt ½ cup of butter in a round baking dish in the oven.
- Add 1 cup of brown sugar evenly over the melted butter.
- Arrange pineapple rings on the sugar mixture, tucking a cherry in the center of each ring.
- In a mixing bowl, cream together ½ cup of softened butter and 1 cup of granulated sugar.
- Beat in 2 eggs one at a time, then stir in 1 teaspoon of vanilla.
- In another bowl, whisk together 1 ½ cups of flour and 2 teaspoons of baking powder.
- Gradually add the dry mixture to the wet mixture, alternating with ½ cup of milk. Mix until just combined.
- Spoon the cake batter over the arranged fruit in the baking dish.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool for 10 minutes before inverting onto a serving plate.
Notes
Serve with whipped cream or vanilla ice cream for a delicious treat.
