Description

A nostalgic dessert featuring caramelized pineapple and cherries atop a soft cake, perfect for any occasion.


Ingredients

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple in juice
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan. Stir in the brown sugar until smooth.
  3. Arrange the pineapple slices over the butter and sugar, placing a cherry in the center of each slice.
  4. Mix together the flour, granulated sugar, baking powder, and salt in a bowl.
  5. Beat the eggs in another bowl, then mix in milk, oil, and vanilla extract.
  6. Combine the wet and dry ingredients, then pour the batter over the pineapple layer in the pan.
  7. Bake for 40-45 minutes or until the cake is golden brown.
  8. Invert the cake onto a serving plate and serve warm.
