Ingredients
- 1 box of cake mix (vanilla)
- 1 cup pineapple juice (not from concentrate)
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup powdered sugar (for the soak)
- 1/4 cup pineapple juice (for soaking)
- Optional: crushed pineapple for decoration
Instructions
- Preheat your oven to 350°F (175°C). Prepare your cake pan by greasing and dusting it with flour.
- Combine the cake mix, 1 cup of pineapple juice, vegetable oil, and eggs in a mixing bowl. Stir until well blended.
- Pour the batter into your prepared cake pan and spread it evenly.
- Bake according to the package instructions, or until a toothpick comes out clean from the center.
- While the cake is baking, mix the powdered sugar with 1/4 cup of pineapple juice until it’s smooth for your soaking syrup.
- Once the cake is done, let it cool in the pan for a few minutes. While still warm, poke holes in the top with a fork and drizzle your pineapple juice soak over it.
- Cool the cake completely in the pan before carefully transferring it to a serving plate.
- For a fun touch, top with crushed pineapple if desired just before serving.
