Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple, diced (fresh or canned)
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
- Oil for cooking
Instructions
- Whisk the marinade: In a bowl, combine soy sauce, brown sugar, minced garlic, minced ginger, salt, and pepper.
- Marinate the chicken: Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
- Heat the skillet: Add oil to the skillet over medium heat until it shimmers.
- Cook the chicken: Remove chicken from marinade, cook for 6–7 minutes per side until fully cooked.
- Add pineapple: Stir in diced pineapple during the last few minutes of cooking.
- Serve hot: Plate the chicken with the sauce and pineapple immediately.
Notes
For added flavor, double the marinade ingredients and simmer a portion for a thicker sauce.
