Description

Savory chicken stir-fried with sweet-tart pineapple in a glossy sauce, perfect for a quick weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple, diced (fresh or canned)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • Oil for cooking


Instructions

  1. Whisk the marinade: In a bowl, combine soy sauce, brown sugar, minced garlic, minced ginger, salt, and pepper.
  2. Marinate the chicken: Add chicken breasts and coat well. Refrigerate for at least 30 minutes.
  3. Heat the skillet: Add oil to the skillet over medium heat until it shimmers.
  4. Cook the chicken: Remove chicken from marinade, cook for 6–7 minutes per side until fully cooked.
  5. Add pineapple: Stir in diced pineapple during the last few minutes of cooking.
  6. Serve hot: Plate the chicken with the sauce and pineapple immediately.

Notes

For added flavor, double the marinade ingredients and simmer a portion for a thicker sauce.
