Description

Delicious pineapple chicken kabobs, perfect for summer barbecues and quick weeknight dinners, featuring juicy chicken, sweet pineapple, and colorful bell peppers.

Ingredients

  • 1 lb Chicken breast (cubed)
  • 1 cup Pineapple chunks (fresh or canned)
  • 1 cup Bell peppers (any color, chopped)
  • 1/4 cup Soy sauce
  • 2 tbsp Honey
  • 2 cloves Garlic (minced)
  • 1 inch Ginger (grated)
  • Salt and pepper (to taste)
  • Skewers (wooden or metal)

Instructions

  1. Combine soy sauce, honey, minced garlic, grated ginger, salt, and pepper to create a marinade.
  2. Add the cubed chicken to the marinade, ensuring it’s well-coated. Let it rest for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken, pineapple chunks, and bell peppers onto the skewers.
  5. Grill the kabobs for about 10-15 minutes, turning them occasionally, until cooked through.
  6. Serve immediately with sides like rice or salad.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning. Optionally add cayenne or smoked paprika to the marinade for extra flavor.
