Description

A savory sandwich filled with fresh basil pesto, luscious turkey, melted cheese, and juicy tomatoes.


Ingredients

  • 2 slices of bread (your choice—sourdough works wonderfully!)
  • 2 tablespoons pesto (homemade or store-bought)
  • 2 slices of fontina cheese (or mozzarella for a milder flavor)
  • 4-6 slices of turkey (deli or leftover roasted turkey)
  • 2 slices of tomato (ripe for the best flavor)
  • Butter for grilling


Instructions

  1. Spread the pesto on one side of each slice of bread.
  2. Layer turkey and tomato slices on top of the pesto on one slice of bread, then add fontina cheese.
  3. Top with the other slice of bread, pesto side down.
  4. Heat a skillet over medium heat and add a small amount of butter.
  5. Place the sandwich in the skillet and grill until golden brown on one side (about 3-4 minutes).
  6. Flip the sandwich, adding more butter if needed, and grill the other side until golden brown and the cheese is melted (another 3-4 minutes).
  7. Remove from the skillet, slice, and serve hot.

Notes

For an extra creamy version, add avocado or use sharp cheddar for a spicy kick.
