Description

Ingredients

  • 24 ounces salmon fillets (4 6-ounce fillets; skin-on or skinless)
  • 6-7 tablespoons pesto (store-bought or homemade)
  • ⅓ cup fresh breadcrumbs
  • ⅓ cup freshly grated parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a rimmed baking sheet by lining it with tin foil and spraying it lightly with vegetable spray.
  2. Lay the salmon fillets on the prepared baking sheet, ensuring they don’t touch each other.
  3. Spoon 1½ tablespoons of basil pesto over each fillet, spreading it evenly with the back of a spoon or a knife.
  4. Combine the breadcrumbs and grated parmesan cheese in a small bowl. Generously top each salmon fillet with the breadcrumb mixture.
  5. Bake the salmon in the preheated oven for 12-15 minutes, depending on your preferred doneness.

Notes
