Ingredients
- 24 ounces salmon fillets (4 6-ounce fillets; skin-on or skinless)
- 6-7 tablespoons pesto (store-bought or homemade)
- ⅓ cup fresh breadcrumbs
- ⅓ cup freshly grated parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C). Prepare a rimmed baking sheet by lining it with tin foil and spraying it lightly with vegetable spray.
- Lay the salmon fillets on the prepared baking sheet, ensuring they don’t touch each other.
- Spoon 1½ tablespoons of basil pesto over each fillet, spreading it evenly with the back of a spoon or a knife.
- Combine the breadcrumbs and grated parmesan cheese in a small bowl. Generously top each salmon fillet with the breadcrumb mixture.
- Bake the salmon in the preheated oven for 12-15 minutes, depending on your preferred doneness.
Notes
For extra crispiness, broil the salmon for 1-2 minutes after baking. Store leftovers in an airtight container for up to 3 days.
