A colorful and refreshing pasta salad perfect for summer picnics and gatherings, made with fresh vegetables and mozzarella.
Ingredients
- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, diced
- 1/2 cup black olives, sliced
- 1 cup mozzarella cheese, cubed
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the rotini pasta: Boil according to package instructions. Once cooked, drain and let it cool.
- Combine fresh ingredients: In a large mixing bowl, toss together the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, and mozzarella.
- Make the dressing: In a separate bowl, whisk olive oil, red wine vinegar, oregano, salt, and pepper until blended.
- Dress the salad: Pour the dressing over the pasta mixture and gently toss to combine everything evenly.
- Serve: Enjoy it chilled or at room temperature.
Notes
Feel free to substitute rotini with any pasta of your choice and add fresh herbs for extra flavor.
