Description

A colorful and refreshing pasta salad perfect for summer picnics and gatherings, made with fresh vegetables and mozzarella.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the rotini pasta: Boil according to package instructions. Once cooked, drain and let it cool.
  2. Combine fresh ingredients: In a large mixing bowl, toss together the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, and mozzarella.
  3. Make the dressing: In a separate bowl, whisk olive oil, red wine vinegar, oregano, salt, and pepper until blended.
  4. Dress the salad: Pour the dressing over the pasta mixture and gently toss to combine everything evenly.
