Ingredients
- 8 oz pasta (penne or fettuccine)
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley, for garnish
- Parmesan cheese, for serving (optional)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about one minute until fragrant.
- Toss in the cherry tomatoes, bell peppers, zucchini, and broccoli. Cook for 4-5 minutes, stirring frequently, until the vegetables are tender yet remain crisp.
- Fold in the cooked pasta and season with salt and pepper to taste.
