Description

Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish
  • Parmesan cheese, for serving (optional)


Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about one minute until fragrant.
  4. Toss in the cherry tomatoes, bell peppers, zucchini, and broccoli. Cook for 4-5 minutes, stirring frequently, until the vegetables are tender yet remain crisp.
