Ingredients
- 8 oz pasta (any type)
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Red pepper flakes (optional)
Instructions
- Begin by cooking the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are soft, about 5 minutes.
- Stir in the fresh spinach and cook until just wilted, which takes another 2-3 minutes.
- Toss the cooked pasta into the skillet and mix well with the other ingredients.
- Remove from heat and fold in the grated parmesan cheese until melted and creamy.
- Season with salt, pepper, and red pepper flakes, if desired. Serve warm and enjoy!
