Ingredients

  • 8 oz pasta (any type)
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Red pepper flakes (optional)


Instructions

  1. Begin by cooking the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms are soft, about 5 minutes.
  4. Stir in the fresh spinach and cook until just wilted, which takes another 2-3 minutes.
  5. Toss the cooked pasta into the skillet and mix well with the other ingredients.
  6. Remove from heat and fold in the grated parmesan cheese until melted and creamy.
  7. Season with salt, pepper, and red pepper flakes, if desired. Serve warm and enjoy!
