Ingredients
- 2 cups long-grain rice
- 4 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large casserole dish over medium heat, then sauté the onion, bell pepper, and garlic until soft.
- Add the rice, stirring to coat it with the oil and vegetables.
- Pour in the broth and add the diced tomatoes, paprika, cumin, salt, and pepper.
- Stir well, then cover the dish with aluminum foil.
- Bake for about 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from the oven and let it sit covered for 5 minutes. Finally, fluff with a fork and enjoy!
