Description

A flavorful one-pot wonder that brings the taste of Spain to your dinner table with minimal effort.


Ingredients

  • 2 cups long-grain rice
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large casserole dish over medium heat, then sauté the onion, bell pepper, and garlic until soft.
  3. Add the rice, stirring to coat it with the oil and vegetables.
  4. Pour in the broth and add the diced tomatoes, paprika, cumin, salt, and pepper.
  5. Stir well, then cover the dish with aluminum foil.
  6. Bake for about 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from the oven and let it sit covered for 5 minutes. Finally, fluff with a fork and enjoy!
