Description
Crispy, golden chicken thighs baked to perfection using a simple spice blend of garlic powder, paprika, onion powder, salt, and pepper.
Ingredients
- 3 pounds bone-in, skin-on chicken thighs (about 6-8 thighs), fat trimmed
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon kosher salt
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 1 teaspoon freshly cracked black pepper
Instructions
- Preheat oven to 450°F and line a rimmed baking sheet with aluminum foil. Place a metal cooling rack on top.
- Pat chicken thighs completely dry with paper towels and trim any excess fat.
- Drizzle olive oil over all sides of the chicken.
- In a small bowl, combine salt, garlic powder, onion powder, paprika, and black pepper. Mix well.
- Rub the spice mixture all over the chicken thighs, ensuring all surfaces are coated.
- Reduce oven temperature to 425°F and place the seasoned chicken on the prepared rack.
- Bake for about 30 minutes, until the chicken reaches an internal temperature of 165°F and the skin is golden and crispy.
- Let chicken rest for 5 minutes before serving.
Notes
For extra crispy skin, ensure the chicken is completely dry before seasoning and do not overcrowd the baking rack.
