Description

A vibrant side dish featuring roasted asparagus topped with melted Parmesan cheese and a splash of lemon.


Ingredients

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup freshly grated Parmesan cheese (about 1 ounce)
  • Zest and juice of one lemon


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the Parmesan cheese on the small holes of a box grater and set aside.
  3. Zest the lemon using a microplane, then halve it.
  4. Wash the asparagus gently and pat dry with a kitchen towel. Trim the ends by bending each stalk until it breaks.
  5. Line a baking sheet with parchment paper. Place the asparagus on the sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss until evenly coated, then spread in an even layer.
  6. Bake in the center of the oven for about 6-8 minutes, or until the asparagus is bright green and just tender.
  7. Remove from the oven, scoot the stalks closer together, and sprinkle with Parmesan cheese. Return to the oven for another 2-3 minutes until the cheese melts.
  8. Transfer to a serving plate, sprinkle with lemon zest, and squeeze over some fresh lemon juice. Serve immediately with extra lemon wedges on the side if desired.

Notes

Choose asparagus that is vibrant in color and firm to the touch for the best results. For extra flavor, try infusing your olive oil with garlic or herbs.
