Description

A soul-warming one-pan meal of juicy chicken thighs glazed with honey butter garlic served over fluffy rice, soaking up all the delicious drippings.


Ingredients

  • 5 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 2 tablespoons honey
  • 1½ cups jasmine rice, rinsed
  • 2½ cups chicken broth
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley


Instructions

  1. Pat the chicken thighs dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 5-6 minutes until golden brown. Flip and sear the other side for another 5-6 minutes. Remove chicken and set aside.
  2. Reduce heat to medium, add butter to the pan and let it melt in the drippings. Stir in minced garlic and cook for 1 minute until fragrant. Add honey and bubble for 30 seconds.
  3. Add rinsed rice to the pan, coating it in the honey garlic mixture. Pour in chicken broth and stir in paprika, thyme, and parsley.
  4. Place chicken back into the pan, skin-side up on top of the rice, ensuring it’s mostly submerged in liquid.
  5. Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
  6. Remove pan from heat and let it rest covered for 5-10 minutes. Fluff rice with a fork and serve warm.

Notes

For a flavor twist, add vegetables during cooking or try different herbs and spices according to your taste. Great for meal prep and leftovers.
