Description
A soul-warming one-pan meal of juicy chicken thighs glazed with honey butter garlic served over fluffy rice, soaking up all the delicious drippings.
Ingredients
- 5 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 5 cloves garlic, minced
- 2 tablespoons honey
- 1½ cups jasmine rice, rinsed
- 2½ cups chicken broth
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
Instructions
- Pat the chicken thighs dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 5-6 minutes until golden brown. Flip and sear the other side for another 5-6 minutes. Remove chicken and set aside.
- Reduce heat to medium, add butter to the pan and let it melt in the drippings. Stir in minced garlic and cook for 1 minute until fragrant. Add honey and bubble for 30 seconds.
- Add rinsed rice to the pan, coating it in the honey garlic mixture. Pour in chicken broth and stir in paprika, thyme, and parsley.
- Place chicken back into the pan, skin-side up on top of the rice, ensuring it’s mostly submerged in liquid.
- Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
- Remove pan from heat and let it rest covered for 5-10 minutes. Fluff rice with a fork and serve warm.
Notes
For a flavor twist, add vegetables during cooking or try different herbs and spices according to your taste. Great for meal prep and leftovers.
