Description

Chewy cookies sandwiched with sweet, fluffy marshmallow filling, perfect for a cozy treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, cinnamon, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and mix well.
  5. Stir in the oats until fully combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool completely on a wire rack.
  9. Mix together the marshmallow fluff and powdered sugar until smooth for the filling.
  10. Spread or pipe the filling onto the flat side of one cookie, then sandwich it with another cookie.
