Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs and vanilla extract until well combined.
- Whisk together the flour, baking soda, cinnamon, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and mix well.
- Stir in the oats until fully combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on a wire rack.
- Mix together the marshmallow fluff and powdered sugar until smooth for the filling.
- Spread or pipe the filling onto the flat side of one cookie, then sandwich it with another cookie.

Notes
