Ingredients
3/4 cup cottage cheese
1 1/4 cups rolled oats
1/2 cup milk
1 egg
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
2 tbsp honey
Butter or oil to coat the pan
Optional toppings: maple syrup, berries
Instructions
Add all ingredients to a high-speed blender.
Blend until the batter is smooth.
Let the batter sit for 5 minutes to thicken.
Heat a non-stick skillet over medium-low heat and lightly grease it.
Pour 1/4 cup of batter per pancake into the pan.
Cook for about 2 minutes per side, until golden brown.
Serve warm with toppings of your choice.
