Ingredients
- 1 pound fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 (8 oz) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 (8 oz) container Cool Whip, thawed
- 1 package graham crackers
Instructions
- In a medium bowl, combine sliced strawberries, granulated sugar, and vanilla extract. Mix well and let sit to produce a juicy filling.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and continue mixing until well incorporated.
- Gently fold in the thawed Cool Whip until the mixture is perfectly creamy.
- In a 9×13 inch dish, layer the graham crackers in a single layer at the bottom.
- Spread half of the cream cheese mixture over the graham crackers, smoothing it out evenly.
- Top this layer with half of the prepared strawberry mixture.
- Repeat the layering with the remaining graham crackers, followed by the rest of the cream cheese mixture, and finish with the strawberries on top.
- Cover the dish and refrigerate for a minimum of 240 minutes (or overnight) for the best results.
Notes
For a lower-calorie option, use reduced-fat cream cheese or sugar substitutes. Enhance presentation by serving in individual glasses or jars, garnished with mint leaves.
