Ingredients
- 1 cup old-fashioned oats
- 2/3 cup shredded coconut
- 1/2 cup creamy peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips
- 1/3 cup honey
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
Instructions
- Combine all ingredients in a large mixing bowl and stir until thoroughly mixed and sticky.
- Cover the bowl and refrigerate for 1 to 2 hours to chill.
- Once chilled, scoop and roll the mixture into one-inch balls.
- Store in an airtight container, enjoying them immediately or refrigerating for up to one week.
Notes
For a richer flavor, toast the coconut before mixing. If the mixture is too crumbly, add more peanut butter as needed.
