Description

Delicious no-bake cookie dough bars that taste like real chocolate chip cookie dough, made with wholesome ingredients and safe to eat raw.


Ingredients

  • 1 packed cup soft Medjool dates, pitted (about 7 ounces or 200g)
  • 2¾ cups rolled oats (about 260-275g)
  • ¼ cup smooth tahini (56g)
  • 4½ tablespoons pure maple syrup
  • 1 tablespoon pure vanilla extract
  • ½ teaspoon fine sea salt
  • 1 cup vegan chocolate chips (180g), divided
  • Optional: 2 teaspoons refined coconut oil


Instructions

  1. If dates are hard, soak in hot water for 5 minutes, then drain and dry.
  2. Pulse rolled oats in a food processor until fine flour forms.
  3. Add soaked dates, tahini, maple syrup, vanilla extract, and salt; blend until a sticky dough forms.
  4. Transfer dough to a large bowl and fold in half the chocolate chips.
  5. If dough is too sticky, chill for 15-20 minutes.
  6. Press dough into a lined loaf pan.
  7. Freeze for 30 minutes to set.
  8. Melt remaining chocolate chips and drizzle over chilled dough.
  9. Let chocolate set before slicing into bars.

Notes

These bars are vegan, gluten-free, and delicious. Adjust the nut butter for different flavors and add optional toppings for variety.
