Refreshing Mint Chocolate Chip Popsicles combining invigorating mint flavors with rich chocolate, perfect for summer days.
Ingredients
- 1 cup fresh mint leaves (packed)
- 1 cup coconut milk (or milk of your choice)
- ½ cup honey or maple syrup (adjust according to sweetness preference)
- ½ teaspoon vanilla extract
- ½ cup mini chocolate chips
Instructions
- Combine mint leaves and coconut milk in a blender. Blend until smooth.
- Strain the mixture through a fine mesh sieve to remove the mint solids.
- In a bowl, whisk together the mint-infused milk, honey (or maple syrup), and vanilla extract until well combined.
- Stir in the mini chocolate chips.
- Pour the mixture into popsicle molds, leaving a bit of space at the top to allow for expansion.
- Insert the sticks and freeze for at least 240-360 minutes, or until solid.
- To release the popsicles, run the molds under warm water for a few seconds.
Notes
These popsicles can be stored in the freezer for up to two months. Wrap each popsicle in plastic wrap or place them in an airtight container to maintain their flavor and texture.
