A versatile and easy mini quiche recipe perfect for brunch and gatherings.
Ingredients
- 4 pie crusts (thawed)
- 4 eggs
- 1 cup milk
- 1/2 teaspoon salt
- 3 ounces Swiss cheese (grated)
- 3 slices bacon (fried and crumbled)
- 2 tablespoons green onion (sliced)
- 1/4 cup (about 1.5 ounces) ham (cubed)
- 4 cups (3 ounces) spinach (wilted)
- 1 tablespoon red bell pepper (cubed)
- 2 tablespoons (1/2 ounce) white button mushrooms (trimmed and finely chopped)
Instructions
- Preheat your oven to 375°F (190°C). Place the thawed pie crusts into muffin tins, gently pressing down to fit.
- In a large bowl, whisk together the eggs, milk, and salt until well combined.
- Mix in your desired fillings—bacon, ham, spinach, bell pepper, mushrooms, and Swiss cheese into the egg mixture.
- Pour the egg mixture evenly into the prepared pie crusts, filling each one about 3/4 of the way full.
- Bake in the oven for 20-25 minutes or until the centers are set and the tops are lightly golden. Allow to cool slightly before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Can be frozen individually for up to 2 months.
