Description

A versatile and easy mini quiche recipe perfect for brunch and gatherings.

Ingredients

  • 4 pie crusts (thawed)
  • 4 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 3 ounces Swiss cheese (grated)
  • 3 slices bacon (fried and crumbled)
  • 2 tablespoons green onion (sliced)
  • 1/4 cup (about 1.5 ounces) ham (cubed)
  • 4 cups (3 ounces) spinach (wilted)
  • 1 tablespoon red bell pepper (cubed)
  • 2 tablespoons (1/2 ounce) white button mushrooms (trimmed and finely chopped)

Instructions

  1. Preheat your oven to 375°F (190°C). Place the thawed pie crusts into muffin tins, gently pressing down to fit.
  2. In a large bowl, whisk together the eggs, milk, and salt until well combined.
  3. Mix in your desired fillings—bacon, ham, spinach, bell pepper, mushrooms, and Swiss cheese into the egg mixture.
  4. Pour the egg mixture evenly into the prepared pie crusts, filling each one about 3/4 of the way full.
  5. Bake in the oven for 20-25 minutes or until the centers are set and the tops are lightly golden. Allow to cool slightly before serving.
