Description

Delicious mini muffins that capture the classic flavors of pancakes, perfect for busy mornings or cozy weekends.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Chocolate chips or blueberries (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined—don’t overmix!
  5. If desired, gently fold in chocolate chips or blueberries.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake for 10-12 minutes or until they’re golden brown and a toothpick comes out clean when inserted.
  8. Allow to cool for a few minutes before removing from the tin. Serve warm for the best experience!

Notes

To serve, drizzle with maple syrup or honey, or sprinkle with powdered sugar. Store in an airtight container at room temperature for up to 2 days or freeze for longer storage.
