Description

A vibrant and creamy shrimp dish featuring fresh corn, feta cheese, and spices, perfect for summer.


Ingredients

  • 1.5 pounds raw large shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • ½ cup chopped onion
  • 5 cloves garlic, minced
  • 1.5 cups cooked corn kernels
  • 1 teaspoon smoked paprika
  • 1 cup half-and-half
  • 4 ounces feta cheese, crumbled
  • 2 small limes
  • Fresh cilantro, chopped


Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the shrimp with chili powder and salt, then cook in the skillet for 3 to 4 minutes until pink. Set aside.
  3. Add butter and onion to the skillet, cooking for 3 minutes. Then add garlic and cook for another 2 minutes.
  4. Stir in corn kernels and smoked paprika, then pour in half-and-half and simmer.
  5. Add crumbled feta and stir until melted.
  6. Squeeze lime juice into the sauce, return shrimp to heat through.
  7. Garnish with corn, lime slices, and cilantro before serving.

Notes

Serve over rice or with corn tortillas for a complete meal. Adjust seasoning to taste.
