A vibrant and flavorful Mexican street corn salad made with sweet corn, tangy lime, and creamy textures, perfect for any gathering.
Ingredients
- 4 cups corn kernels (fresh or frozen)
- 2 tablespoons olive oil
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup feta cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Grill or sauté the corn over medium-high heat until charred, about 8-10 minutes. Once cooled, slice the kernels off the cob. If using frozen corn, sauté in a skillet until warmed through.
- In a large bowl, mix the corn with olive oil, mayonnaise, sour cream, crumbled feta, chopped cilantro, lime juice, chili powder, and salt and pepper.
- Stir until everything is evenly combined.
- Taste and adjust the seasoning if needed. Serve chilled or at room temperature.
Notes
Best served chilled. Can be paired with grilled chicken or fish.
