Description

A vibrant and flavorful take on traditional Mexican street corn, grilled to perfection and topped with a creamy blend and cotija cheese.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons fresh lime juice
  • Salt to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 10–15 minutes, turning occasionally until slightly charred.
  3. In a bowl, mix together the mayonnaise, sour cream, chili powder, lime juice, and salt until smooth.
  4. Once the corn is grilled, brush the creamy mixture generously all over the hot corn.
  5. Sprinkle cotija cheese over the corn and add additional chili powder if desired.
  6. Garnish with chopped cilantro, and serve immediately.

Notes

For extra flavor, soak the corn in water for 15–30 minutes before grilling. You can also add diced jalapeños for a spicy kick.
