Description

A colorful and satisfying Mexican Shrimp Bowl that’s perfect for weeknight dinners or brunch with friends, featuring zesty shrimp, hearty beans, creamy avocado, and fresh veggies.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp: In a bowl, mix the shrimp with olive oil, garlic powder, chili powder, salt, and pepper.
  2. Cook the shrimp: Heat a skillet over medium heat. Once hot, add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through.
  3. Combine ingredients: In a large bowl, combine the cooked rice, black beans, corn, diced avocado, cherry tomatoes, and chopped cilantro.
  4. Add flavor: Squeeze fresh lime juice over the mixture and gently toss everything together.
  5. Serve: Plate the shrimp on top of the rice and bean mixture. Enjoy every vibrant bite!

Notes

Fresh shrimp should be cleaned and deveined. Marinate the shrimp for more flavor and avoid overcooking for optimal tenderness.
