Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tomato (or 1/2 cup tomato sauce)
  • 2 cups chicken or vegetable broth
  • Salt to taste
  • Optional: 1/2 cup frozen peas or diced bell peppers


Instructions

  1. Begin by rinsing the rice under cold water until the water runs clear.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add the rinsed rice and sauté, stirring frequently, until golden brown.
  4. Toss in the diced onion and garlic, sauté for an additional 2-3 minutes.
  5. Stir in the chopped tomato (or tomato sauce) and cook for another minute.
  6. Pour in the broth and add salt, bringing it to a boil.
  7. Reduce the heat to low, cover, and let it simmer for about 15 minutes.
  8. Remove from heat and let it sit covered for another 5 minutes.
  9. Fluff with a fork before serving.

Notes

For a healthier version, substitute white rice with brown rice, noting that cooking times will differ. Rinse the rice to ensure fluffiness.
