Ingredients
- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1 tomato (or 1/2 cup tomato sauce)
- 2 cups chicken or vegetable broth
- Salt to taste
- Optional: 1/2 cup frozen peas or diced bell peppers
Instructions
- Begin by rinsing the rice under cold water until the water runs clear.
- Heat vegetable oil in a large skillet over medium heat.
- Add the rinsed rice and sauté, stirring frequently, until golden brown.
- Toss in the diced onion and garlic, sauté for an additional 2-3 minutes.
- Stir in the chopped tomato (or tomato sauce) and cook for another minute.
- Pour in the broth and add salt, bringing it to a boil.
- Reduce the heat to low, cover, and let it simmer for about 15 minutes.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff with a fork before serving.
Notes
For a healthier version, substitute white rice with brown rice, noting that cooking times will differ. Rinse the rice to ensure fluffiness.
