Description

Ingredients

  • 2 cups long-grain rice
  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well to remove excess starch.
  2. In a large skillet or saucepan, heat the vegetable oil over medium heat.
  3. Add the chopped onion and garlic, sautéing until translucent.
  4. Stir in the rice and cook, stirring frequently, until it turns golden brown.
  5. Mix in the diced tomatoes (with their juices), chicken broth, cumin, chili powder, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and garnish with fresh cilantro if desired.

Notes

For an added flavor kick, try sautéing some bell peppers along with the onion. Adjust spices according to your taste.
