Ingredients
- 2 cups long-grain rice
- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well to remove excess starch.
- In a large skillet or saucepan, heat the vegetable oil over medium heat.
- Add the chopped onion and garlic, sautéing until translucent.
- Stir in the rice and cook, stirring frequently, until it turns golden brown.
- Mix in the diced tomatoes (with their juices), chicken broth, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro if desired.
Notes
For an added flavor kick, try sautéing some bell peppers along with the onion. Adjust spices according to your taste.
