Description

A flavorful and comforting Mexican Rice recipe that captures the essence of tradition.


Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tomato, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened.
  3. Stir in the rinsed rice and toast it for a few minutes until it turns lightly golden.
  4. Add in the diced tomato, chili powder, cumin, and broth. Bring this mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the rice is tender and all the liquid is absorbed.
  6. Fluff the rice with a fork, season with salt to taste, and garnish with fresh cilantro just before serving.

Notes

For the best results, rinse the rice to remove excess starch and prevent stickiness. Feel free to customize with peas, corn, or bell peppers.
