Description

A flavorful and simple Mexican rice recipe that pairs perfectly with tacos, enchiladas, or grilled meats.


Ingredients

  • 1 cup Long-grain white rice
  • 2 cups Vegetable or chicken broth
  • 1 small Onion, diced
  • 2-3 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • Salt, to taste
  • Fresh cilantro, for garnish (optional)


Instructions

  1. Sauté the diced onion and minced garlic in a large skillet with a tablespoon of oil over medium heat until fragrant.
  2. Toast the rice for about 2-3 minutes until slightly golden, stirring constantly.
  3. Combine the tomato paste, broth, cumin, chili powder, and salt. Bring to a boil.
  4. Simmer by reducing heat to low, covering the skillet, and cooking for 15-20 minutes until rice is tender.
  5. Fluff the rice with a fork after letting it sit covered for 5 minutes.

Notes

Rinse the rice before cooking for better texture. You can use brown rice for a healthier option but adjust cooking time and liquid accordingly.
