Description

Recreate your favorite Taco Bell Mexican Pizza at home with crispy tortillas, savory beef, and melty cheese.


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 oz refried beans (about 1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (Roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives, sliced
  • 1/4 cup sour cream
  • 2 green onions (finely diced)


Instructions

  1. Cook the beef: In a large frying pan over medium heat, add the ground beef. As it cooks, use a spatula to break it into small pieces. This should take about 5-8 minutes until it’s browned. Drain any excess grease.
  2. Season: Stir in the taco seasoning, water, and 4 tbsp of enchilada sauce. Mix well and let it simmer for 1-2 minutes until heated through.
  3. Assemble the pizzas: Take one tortilla and spread a layer of refried beans. Top it with the seasoned beef. Add a sprinkle of cheese and place another tortilla on top.
  4. Add sauce and cheese: Spread 1 tbsp of enchilada sauce on the top tortilla and cover it with more cheese.
  5. Cook: Air Fryer Method: Preheat to 400°F. Place the pizza in the air fryer and cook for about 5 minutes. Oven Method: Preheat oven to 350°F, arrange pizzas on a lined sheet pan, and bake for 8-10 minutes. Pan Frying Method: Heat oil in a large frying pan, add a pizza, cover with a lid, and cook for 4-5 minutes.
  6. Garnish and serve: Serve your pizzas hot, topped with diced tomatoes, red onion, olives, sour cream, and green onions.

Notes

Feel free to customize toppings and use lean ground beef to reduce grease.
