Description

A vibrant and zesty twist on classic macaroni salad, perfect for potlucks and family gatherings.


Ingredients

  • 2 cups macaroni
  • 1 cup roasted corn
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1/2 cup mayonnaise (can substitute with Greek yogurt for a healthier option)
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: cooked chicken or ham


Instructions

  1. Cook the macaroni according to package instructions and then drain it.
  2. In a large mixing bowl, combine cooked macaroni with roasted corn, black beans, and diced bell pepper.
  3. In another bowl, prepare the dressing by whisking together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Pour this zesty dressing over the macaroni mixture and toss everything together until well coated.
  5. If you’re adding protein, fold in some chopped chicken or ham at this stage.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld.

Notes

Garnish with fresh cilantro or scallions for color. For extra flavor, consider roasting the corn.
