Description

Ingredients

  • 2 cups elbow macaroni
  • 1 cup roasted corn
  • 1 can black beans, drained and rinsed
  • 1 cup bell peppers, diced
  • 1/2 cup creamy Mexican dressing
  • Salt and pepper to taste
  • Optional: Cooked chicken or ham for additional protein


Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked macaroni, roasted corn, black beans, and diced bell peppers.
  3. Pour in the creamy Mexican dressing and mix everything until well coated.
  4. Season with salt and pepper according to your taste.
