Description

A flavorful and vibrant twist on classic rice, flavored with fresh herbs and zesty lime.


Ingredients

  • 1 cup rice
  • 2 cups vegetable broth
  • 1 cup fresh cilantro
  • 1 cup fresh parsley
  • 1 jalapeño, seeded and chopped
  • 2 cloves garlic
  • Juice of 1 lime
  • Salt to taste
  • Olive oil (for sautéing)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Blend the cilantro, parsley, jalapeño, garlic, lime juice, and a pinch of salt until smooth.
  3. Heat olive oil in a pot over medium heat, then add the rinsed rice and sauté for a few minutes.
  4. Pour in the vegetable broth and herb mixture, stir to combine, and bring to a boil.
  5. Cover and reduce heat to low, cooking for about 15-20 minutes until tender.
  6. Fluff the rice with a fork before serving.

Notes

Store leftover rice in an airtight container for up to 3 days. It freezes well for up to 3 months.
