A flavorful and vibrant twist on classic rice, flavored with fresh herbs and zesty lime.
Ingredients
- 1 cup rice
- 2 cups vegetable broth
- 1 cup fresh cilantro
- 1 cup fresh parsley
- 1 jalapeño, seeded and chopped
- 2 cloves garlic
- Juice of 1 lime
- Salt to taste
- Olive oil (for sautéing)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Blend the cilantro, parsley, jalapeño, garlic, lime juice, and a pinch of salt until smooth.
- Heat olive oil in a pot over medium heat, then add the rinsed rice and sauté for a few minutes.
- Pour in the vegetable broth and herb mixture, stir to combine, and bring to a boil.
- Cover and reduce heat to low, cooking for about 15-20 minutes until tender.
- Fluff the rice with a fork before serving.
Notes
Store leftover rice in an airtight container for up to 3 days. It freezes well for up to 3 months.
