Description

A vibrant and zesty Mexican coleslaw featuring crunchy vegetables and a creamy dressing, perfect for summer barbecues and potlucks.


Ingredients

  • 1 bag coleslaw mix
  • 1 can black beans, rinsed and drained
  • 1 cup bell peppers, diced (red, yellow, or green)
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Juice of 1 lime


Instructions

  1. Combine the coleslaw mix, black beans, diced bell peppers, and chopped cilantro in a large bowl. Toss gently to mix.
  2. Whisk together the mayonnaise, taco seasoning, lime juice, salt, and pepper in a separate bowl until smooth.
  3. Pour the dressing over the coleslaw mixture. Use tongs or a spatula to toss everything together until coated evenly.
  4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld and the slaw crisp up.

Notes

Optional: Greek yogurt can replace mayonnaise for a lighter version. Feel free to customize with favorite ingredients.
