Ingredients
- 1 bag coleslaw mix
- 1 can black beans, rinsed and drained
- 1 cup bell peppers, diced (red, yellow, or green)
- 1/2 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Combine the coleslaw mix, black beans, diced bell peppers, and chopped cilantro in a large bowl. Toss gently to mix.
- Whisk together the mayonnaise, taco seasoning, lime juice, salt, and pepper in a separate bowl until smooth.
- Pour the dressing over the coleslaw mixture. Use tongs or a spatula to toss everything together until coated evenly.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld and the slaw crisp up.
Notes
Optional: Greek yogurt can replace mayonnaise for a lighter version. Feel free to customize with favorite ingredients.
