Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- Toppings: sour cream, avocado, cilantro, tortilla chips
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, and cooked rice in a large bowl.
- Transfer the mixture into a greased casserole dish.
- Sprinkle shredded cheese on top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and allow it to rest for a few minutes.
- Serve with your choice of toppings like sour cream, avocado, cilantro, or crushed tortilla chips.
Notes
