Description

A comforting and versatile Mexican Chicken Casserole that’s quick to prepare and perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Toppings: sour cream, avocado, cilantro, tortilla chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, and cooked rice in a large bowl.
  3. Transfer the mixture into a greased casserole dish.
  4. Sprinkle shredded cheese on top.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and allow it to rest for a few minutes.
  7. Serve with your choice of toppings like sour cream, avocado, cilantro, or crushed tortilla chips.
