Ingredients
- 1 cup dried black beans (or 2 cans for convenience)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bay leaf
- Salt and pepper to taste
- Optional toppings: fresh cilantro, diced avocado, lime wedges
Instructions
- Prepare the beans: If using dried beans, soak them in water overnight. Drain and rinse before cooking.
- Cook the beans: In a large pot, cover the soaked beans with fresh water and bring to a boil. Reduce the heat, add the bay leaf, and let it simmer for about 60-90 minutes, or until tender. For canned beans, skip this step and move to sautéing.
- Sauté aromatics: In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, cooking until softened (about 3-5 minutes).
- Combine and season: Add the cooked beans to the skillet, along with cumin, chili powder, salt, and pepper. Stir and let Cook for an additional 10-15 minutes.
- Adjust seasoning: Taste and adjust salt and spices as needed.
- Serve: Enjoy your Mexican black beans warm, garnished with cilantro and a squeeze of lime.
Notes
