Description

Ingredients

  • 1 cup dried black beans (or 2 cans for convenience)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, diced avocado, lime wedges


Instructions

  1. Prepare the beans: If using dried beans, soak them in water overnight. Drain and rinse before cooking.
  2. Cook the beans: In a large pot, cover the soaked beans with fresh water and bring to a boil. Reduce the heat, add the bay leaf, and let it simmer for about 60-90 minutes, or until tender. For canned beans, skip this step and move to sautéing.
  3. Sauté aromatics: In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, cooking until softened (about 3-5 minutes).
  4. Combine and season: Add the cooked beans to the skillet, along with cumin, chili powder, salt, and pepper. Stir and let Cook for an additional 10-15 minutes.
  5. Adjust seasoning: Taste and adjust salt and spices as needed.
  6. Serve: Enjoy your Mexican black beans warm, garnished with cilantro and a squeeze of lime.

Notes
