This simple recipe transforms chicken breasts into a juicy and flavorful meal with just four ingredients.
Ingredients
- 2 large, boneless skinless chicken breasts (about 1 1/2 pounds total)
- 2/3 cup mayonnaise
- 1/2 cup finely grated Parmesan cheese (about 2 oz.)
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 375°F.
- In a small bowl, combine the mayonnaise, grated Parmesan cheese, and garlic powder. Mix until well combined.
- Cut the chicken breasts in half horizontally to create thinner cutlets. Pat the chicken dry with paper towels. Season both sides with kosher salt and freshly ground black pepper.
- Place the chicken in a 9×13-inch baking dish. Spread the mayonnaise mixture evenly over the chicken. Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F.
- Set the oven to broil. Broil the chicken for 2-3 minutes, or until the topping is golden brown and crispy.
- Remove the chicken from the oven and garnish with chopped parsley, if desired. Serve with your favorite side dishes.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days and frozen for up to 3 months. Use sour cream or Greek yogurt instead of mayonnaise if desired.
