Description

A Flavor-Packed Delight featuring seared salmon on a bed of creamy orzo, kissed by the zest of fresh lemon.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 1 lemon (zested and juiced)
  • 2 cups vegetable broth or water
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then add them to the pan. Sear for about 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
  2. In the same skillet, add the orzo and toast it for a minute. Pour in the vegetable broth or water along with the lemon juice and zest. Bring to a boil, then reduce the heat and let simmer until the orzo is cooked—about 10 minutes.
  3. Fluff the orzo with a fork and place the seared salmon on top. Garnish with fresh parsley before serving.

Notes

For an aesthetically pleasing presentation, serve the dish in shallow bowls with a crisp green salad drizzled with a light vinaigrette. Try adding sautéed spinach or cherry tomatoes for extra nutrition.
