A Flavor-Packed Delight featuring seared salmon on a bed of creamy orzo, kissed by the zest of fresh lemon.
Ingredients
- 2 salmon fillets
- 1 cup orzo pasta
- 1 lemon (zested and juiced)
- 2 cups vegetable broth or water
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then add them to the pan. Sear for about 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
- In the same skillet, add the orzo and toast it for a minute. Pour in the vegetable broth or water along with the lemon juice and zest. Bring to a boil, then reduce the heat and let simmer until the orzo is cooked—about 10 minutes.
- Fluff the orzo with a fork and place the seared salmon on top. Garnish with fresh parsley before serving.
Notes
For an aesthetically pleasing presentation, serve the dish in shallow bowls with a crisp green salad drizzled with a light vinaigrette. Try adding sautéed spinach or cherry tomatoes for extra nutrition.
