Description
A wonderfully tender and flavorful meatloaf with a sweet and tangy glaze that the whole family will love.
Ingredients
- 2 lbs ground beef (85% or 80% lean)
- 1 medium onion, finely chopped
- 1 teaspoon olive oil
- 2 large eggs
- 3 garlic cloves, minced
- 2 tablespoons ketchup
- 3 tablespoons fresh parsley, finely chopped
- ¾ cup Panko breadcrumbs
- ⅓ cup milk
- 1 teaspoon salt, or to taste
- 1 teaspoon Italian seasoning
- ½ teaspoon ground black pepper
- ¾ cup ketchup (for glaze)
- 1½ teaspoons white vinegar
- 2 tablespoons brown sugar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Prepare your workspace: Line a rimmed baking sheet with parchment paper and preheat your oven to 350°F.
- Sauté the onions: In a medium skillet, heat olive oil over medium heat, add the chopped onion, and sauté until softened and golden (approx. 5-7 minutes). Transfer to a plate to cool slightly.
- Make the meatloaf mixture: In a large bowl, combine cooled sautéed onions, ground beef, eggs, minced garlic, ketchup, fresh parsley, Panko breadcrumbs, milk, salt, Italian seasoning, and black pepper. Mix just until well combined.
- Shape and bake: Transfer the mixture to the baking sheet, shaping it into a loaf. Bake uncovered at 350°F for 40 minutes.
- Prepare the glaze: While baking, combine glaze ingredients (ketchup, white vinegar, brown sugar, garlic powder, and onion powder) in a bowl; stir until mixed.
- Apply glaze and finish baking: After the initial 40 minutes, spread the glaze over the meatloaf, then bake for an additional 20 minutes until the internal temperature reaches 160°F.
- Rest before serving: Allow the meatloaf to rest for 10-15 minutes before slicing.
Notes
For variations, replace half of the ground beef with ground turkey, pork, or chicken. You can also use BBQ sauce instead of the glaze.
