Description

A wonderfully tender and flavorful meatloaf with a sweet and tangy glaze that the whole family will love.


Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion, finely chopped
  • 1 teaspoon olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 tablespoons ketchup
  • 3 tablespoons fresh parsley, finely chopped
  • ¾ cup Panko breadcrumbs
  • ⅓ cup milk
  • 1 teaspoon salt, or to taste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper
  • ¾ cup ketchup (for glaze)
  • 1½ teaspoons white vinegar
  • 2 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder


Instructions

  1. Prepare your workspace: Line a rimmed baking sheet with parchment paper and preheat your oven to 350°F.
  2. Sauté the onions: In a medium skillet, heat olive oil over medium heat, add the chopped onion, and sauté until softened and golden (approx. 5-7 minutes). Transfer to a plate to cool slightly.
  3. Make the meatloaf mixture: In a large bowl, combine cooled sautéed onions, ground beef, eggs, minced garlic, ketchup, fresh parsley, Panko breadcrumbs, milk, salt, Italian seasoning, and black pepper. Mix just until well combined.
  4. Shape and bake: Transfer the mixture to the baking sheet, shaping it into a loaf. Bake uncovered at 350°F for 40 minutes.
  5. Prepare the glaze: While baking, combine glaze ingredients (ketchup, white vinegar, brown sugar, garlic powder, and onion powder) in a bowl; stir until mixed.
  6. Apply glaze and finish baking: After the initial 40 minutes, spread the glaze over the meatloaf, then bake for an additional 20 minutes until the internal temperature reaches 160°F.
  7. Rest before serving: Allow the meatloaf to rest for 10-15 minutes before slicing.

Notes

For variations, replace half of the ground beef with ground turkey, pork, or chicken. You can also use BBQ sauce instead of the glaze.
