Description

A luscious salmon dish bathed in a creamy sun-dried tomato sauce, perfect for special occasions or romantic dinners.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large, oven-safe skillet over medium-high heat.
  3. Season the salmon fillets generously with salt, pepper, and garlic powder.
  4. Sear the salmon skin-side down for 3-4 minutes until golden brown and crispy.
  5. Flip the fillets and add sun-dried tomatoes and heavy cream, stirring to blend.
  6. Sprinkle red pepper flakes over the sauce for an added kick.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until the salmon flakes easily with a fork.
  8. Garnish with fresh basil or parsley before serving.

Notes

For a lighter version, substitute heavy cream with coconut or almond milk. Serve with garlic mashed potatoes or roasted asparagus.
