Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large, oven-safe skillet over medium-high heat.
- Season the salmon fillets generously with salt, pepper, and garlic powder.
- Sear the salmon skin-side down for 3-4 minutes until golden brown and crispy.
- Flip the fillets and add sun-dried tomatoes and heavy cream, stirring to blend.
- Sprinkle red pepper flakes over the sauce for an added kick.
- Transfer the skillet to the oven and bake for 15-20 minutes until the salmon flakes easily with a fork.
- Garnish with fresh basil or parsley before serving.
Notes
For a lighter version, substitute heavy cream with coconut or almond milk. Serve with garlic mashed potatoes or roasted asparagus.
